The Brief

In 2018 Tailor Made were approached to Survey an old Casino in Nottingham, with a view to helping to transform it into a Cosy Club. This is an old and very grand Victorian building spread across five floors with many of the rooms in an immaculate condition, we were particularly surprised to find pristine full-sized snooker tables upstairs along with roulette and card tables. The dining tables in the rooms below were even laid out with the original silverware.

The task here was to bring the kitchen and bars up to speed but keep as much character front of house as possible and there were certainly lots of character to keep.

 

The Result

The decision was to opt for 2 kitchens on different floors one the daddy of the other. Speed of services is paramount, and the kit selection reflects this with; wall mounted heated gantries either side of the pass, Foster Drawer refrigeration servicing nearly every station and a split cookline with induction and steam convection oven at both ends. The pass is central to the cookline and directly opposite the main service doors to the kitchen, the doors on the adjacent wall served the potwash only and helped keep good segregation.

The smaller “banqueting kitchen” upstairs is very similar albeit has much more plating space and twin track double deep gantries to cater for events.

Both kitchens were fitted with screens, gone are the days of paper tickets, and both shared the cold rooms thus we made sure that there was plenty of service refrigeration in each kitchen.

 

Due to the size of the venue, ice was a hot topic and we spec’d sizeable machines capable of storing 700kg of cubed ice and plenty of flaked ice. We also future proofed the venue with services so that additional ice machines could be introduced if required.

 

The glasswash station was housed in a central room on the middle floor and allowed for two operatives to work side by side at the same time. There are bars dotted all over in various rooms and those a little further away have their own glass wash machines.

 

It was a pleasure to work with Loungers again and the results in Nottingham were fantastic. This is surely Loungers flagship Cosy Club and it was a pleasure to join their team for the opening.
